Technique: sear and finish fish fillets

This method avoids fish sticking to the pan

  1. Preheat oven to 180C
  2. In a frying pan, put a layer of folded baking paper, pour some olive oil on the paper, apply heat
  3. Place the fillet skin-side down and cook from the bottom of the fillet. About 4 mins for monkfish.
  4. Put fillets into a tray and finish in the oven for 5min
