- Preheat oven to 180C
- In a frying pan, put a layer of folded baking paper, pour some olive oil on the paper, apply heat
- Place the fillet skin-side down and cook from the bottom of the fillet. About 4 mins for monkfish.
- Put fillets into a tray and finish in the oven for 5min
